A classic, traditional swiss cheese, gruyère is a semi-hard cheese made from cow's milk that was first made in the town of Gruyère, Switzerland. Gruyère cheese has a firm texture, a rich, slightly nutty taste, and a pale yellow color.

A hard, low-moisture cheese that is a bit trickier than most to melt. Provides a sharp, salty, and slightly acidic flavor on top of many dishes. The longer the aging time, the sharper the flavor in general. Naturally white, some cheddar have added color.

Emmental has very good melting properties, which makes it ideal for cheese fondue or any dish that requires melted cheese, such as gratins and casseroles, grilled cheese sandwiches, pasta, and egg dishes. It can also be eaten cold, layered into sandwiches, or served on a cheese platter with fruit and nuts.
