USDA Striploin The Striploin is similar to the Rib Eye, however it is becoming a favourite for many steak lovers because of its stronger meat flavour and its tenderness throughout. The characteristic strip of fat gives it extra succulent flavour.

It comes from the muscle that helps support the diaphragm between a cow's rib and loin, its just sort of “hanging there” and it does absolutely nothing… as a result its one of the most tender steaks. A thicker cut within the Short Plate that's full of flavor with a coarse texture.
