Stony, Calcerous, Well structured and drained, altitude : 300 meters above sea level.
VINIFICATION
Following a careful selection of the grapes in late September. The grape stalks are removed and traditional temperature controlled fermentation on the skins in the stainless is applied for 10 days with periodic pumping over. The wines is aged for three months in 34hr
French oak barrels. The cycle ends with a short bottle rest.
FLAVORS
An intensive ruby-red color with violet undertones, Intense bouquet of ripe red fruit , Rich in fruit, lively, elegantly framed by oak spices.
A vibrant Sangiovese that compliments cured meats, poultry and stew and fresh cheeses.

VINIFICATION
Following a careful selection of the grapes in late early August, the grape stalks are removed and a short cold maceration of the crushed grapes in stainless steel is applied. Subsequently, a soft pressing takes place followed by alcoholic fermentation with select yeast for 10 days to preserve the natural 100% Pinot Grigio fruit and inimitable freshness of the wine.

Passo a Due Bianco Salento IGP “Celebration”₱843.00Passo a Due as Paso Doble as the dance technique that joins two bodies in one, in a thrill of passion. This is what happens to our Vermentino and Malvasia Bianca grapes, a deep harmony attracting especially young people.
Vermentino is made from the very precious fruit harvested from 3 hectares of vineyard in Brindisi and Taranto, where the Ionian Sea meets the Adriatic in another faboulous fusion.
The Malvasia Bianca is another historical grape indigenous to Salento, taken here by Venetians from Peloponnese under the name Monemvasia.
Both grapes are rigorously selected, picked by hand into cases and then cold–macerated at 4 C for 48 hours. A maturation in bottle enhances the richness.
